Nothing says the holidays are nearing like the scent of ginger and vanilla in the air. It is funny how an aroma can take you back to a memory or invoke a feeling. Whenever I smell ginger and vanilla, I immediately recall fond family and holiday memories. Therefore, I love to make gingerbread oatmeal on cool mornings or when I need a little comfort food pick me up!
Not only is this a delicious, comfort food, it also provides nutritional benefits. Ginger is known for aiding in decreasing bad bacteria growth in the stomach and the mouth, settling a queasy stomach, reducing inflammation and swelling in joints and muscles, may help in lowering blood sugar, reducing menstrual cramps and lowering LDL “bad” cholesterol.

Add the oats and water to a small pot. Bring to a gentle boil over medium heat and cook for 4 to 5 minutes. Then add the almond milk, pumpkin pie spice, allspice, vanilla, and molasses and stir. Cook for an additional 2 to 3 minutes, until cooked through.
Add the oats to a bowl, top with cashew butter and pecans. Enjoy!
