My eyes spy something yummy and delicious! Do you know what it could be? Tahini Grilled Carrots!! I love preparing this quick and easy side dish because I know that it is not only nutritious but also delicious!

Carrots have nutrients such as vitamin A, potassium, fiber and antioxidants, which support eye and bone health, boost the immune system, and reduce the inconvenience of constipation.

While carrots can be eaten raw, cooked, or steamed, try this recipe and grill them! It is sure to be a delight!!

Tahini Dressing
 ¼ cup Tahini
 2 tbsp lemon juice
 1 garlic clove (minced or grated)
 1 pinch of cayenne
 ¼ cup coarse salt
Grilled Carrots
 10 peeled carrots
 1 tbsp olive oil
 ¼ tsp coarse Himalayan salt
 1 pinch of black pepper

Warm the grill to medium - high temperature.

Prepare Tahini Dressing

Mix 1/4 cup of Tahini with 2 tablespoons of lemon juice, garlic, cayenne, and course Himalayan salt in a small bowl.

Wisk until all ingredients are combined. Set to the side.

Grilled Carrots

Remove carrot green tops and set aside.

***TIP**These can be used to garnish the plate. You can also plant in your home garden to grow more carrots (Yes, free food)! ***

Coat 10 carrots with 1 tablespoon of olive oil, 1/4 teaspoon of Himalayan salt, and pinch of black pepper.

Place carrots on the grill for 5 minutes until softened, turning and allowing light charring to form.

Remove the carrots from the grill and plate them, as desired.

Mix the Tahini dressing with 2 tablespoons of water and drizzle over the carrots. Enjoy!!
